a small evergreen tree in the magnolia family. Its flavor is like licorice and anise, having a distinct pungent
hint of sweetness. Can be used instead of anise seed. Star Anise is an important ingredient in Chinese
cooking and the Chinese five spice powder. Excellent in fish stews, poultry and pork dishes. Use
whole or a few carpels to taste. Three or four stars produce the taste equivalent of 1/2 teaspoon
ground. Add to soups, basting liquids, fruit syrups and sweet creams. Excellent when
used on roasted chicken, braised fish and scallops.
